Baked Apple Pancakes

Here's a fun breakfast idea from my favorite Betty Crocker cookbook.  Puffy oven pancakes with sliced apples, brown sugar, and cinnamon.  The whole thing is turned out onto the plate right out of the oven, so you get this warm, beautiful, carmelized, crispy exterior with a luscious and fluffy interior.  It's heavenly, friends.  And ever so simple!  On a whim, I whipped up two of these bad boys for Michael's (aka my) sister and her hubby last weekend when they came to visit.  Which also means, I made these at the last minute, with ingredients on hand.  Aaahh, I just love that!  Here's how Mama (and her "friend" Betty) makes it:

Baked Apple Pancakes

Ingredients:
- 2 T. butter
- 2 eggs
- 1/2 c. flour
- 1/2 c. milk
- 1/4 t. salt
- 2 T. packed brown sugar
- 1/4 t. ground cinnamon
- 1 medium apple, sliced & peeled


Directions:  (Taken from Betty Crocker Cookbook, I actually doubled this recipe to make 2)


1. Preheat oven to 400 degrees. Place butter in a 9" pie plate, then place in oven until butter is melted. 

2. Meanwhile, beat eggs slightly in a medium bowl with wire whisk or hand beater. Beat in flour, milk and salt just until mixed (do not overbeat or pancake may not puff).

3.  Brush bottom and sides of pie plate with melted butter, then sprinkle in brown sugar and cinnamon.



4.  Peel and slice the apples.  Arrange apple slices on the cinnamon sugar mixture, then pour batter over the apples.




5. Bake 30 to 35 minutes or until puffy and deep golden brown. Immediately loosen edge of pancake and turn upside down onto heatproof serving plate.

place plate over the top, then flip over


and ta-da!  like magic, a beautiful golden pancake

Of course, little miss thought they were pretty yummy, too!
