Homemade Frozen Pizza

Yes, you heard me right.  Homemade FROZEN pizza.  No, it's not shaped like Olaf or one of Elsa's magical snowflakes.  It's good ole homemade pizza, with the ease of the frozen ones.  The more we add to our plate, the more I'm finding that we can't always keep up with making everything from scratch.  At least not in real time.  Enter the ever-popular make ahead freezer meal!  I see a few of these in my pregnant sister-in-laws' future ;)


Basically, I use the same recipes that I use for my weekly pizzas, but pre-cook the crust slightly so it sets up before adding the toppings then popping in the freezer.  From there, you can just pull it out and bake!  I'm thinking when I do make them in real-time, I'm going to just double it to stock up the freezer. Imagine the possibilities!!






Homemade Frozen Pizza

Ingredients:

Directions:
1.  Make the dough.  For freezing, I split one batch of the dough into 6 smaller pizzas that would fit inside a gallon freezer bag.

2. Preheat oven to 425 degrees F.  Press or roll out onto a 50/50 mixture of flour and cornmeal to keep the bottom from sticking.  Do not grease the pan.  Poke each crust a few times with a fork to prevent bubbles. Bake each crust without toppings for 3-4 minutes, until set and maybe just the slightest bit browned.




3.  Remove crusts to wire racks to cool.  Once completely cooled, add sauce and desired toppings.  The smaller sizes make it nice and easy to individualize each pizza. 



4.  Layer pizzas on a sheet pan or cutting board that will fit in your freezer, separating each later with parchment paper.  Allow to freeze until the cheese starts to harden.



 



5.  Remove from freezer and quickly wrap in plastic wrap and seal tightly in a gallon freezer bag. Label by name or toppings and include cook times for easy reheating.  Return to freezer.

 Greek yogurt feta dill sauce topped with spinach, feta, kalamata olives, and sliced tomatoes





6.  When ready to cook, place frozen pizza directly into a preheated 425 degree F oven and bake for 15-18 minutes.  Cheese should be melted and slightly brown, and the crust should be brown.



Well, we didn't get a picture of the cooked pizza - it was devoured too quickly!  But here's a cute picture of one of many reasons we are so busy lately!
