Cookies for Santa: Oatmeal Chocolate Chip Cookies

When I got home from work on Christmas Eve, I realized we were missing one important thing - cookies for Santa!  So I did what any mama would do -  whipped out my Santa apron, Betty Crocker cookbook,  and mixed up a batch of oatmeal chocolate chip cookies. 



Oatmeal Chocolate Chip Cookies

Ingredients:
- 2/3 c. sugar
- 2/3 c. packed brown sugar
- 1/2 c. butter, softened
- 1/2 c. shortening
- 1 t. baking soda
- 1 t. ground cinnamon
- 1 t. vanilla
- 1/2 t. baking powder
- 1/2 t. salt
- 2 large eggs
- 3 c. old-fashioned oats
- 1 c. flour
- 1 c. mini chocolate chips (can substitute raisins, chopped nuts, or semisweet chocolate chips, if desired)



Directions:

1.  Heat oven to 375 degrees.  In a large bowl, mix all ingredients except oats, flour, and chocolate chips.   Stir in oats, flour, and chocolate chips.

2.  On an ungreased cookie sheet, drop dough by rounded spoonfuls about 2 inches apart.  Bake 9 to 11 minutes or until light brown.  Cool on wire racks, share with your family/friends, and be sure to keep a few for ole St. Nick!  I usually make a double batch, drop the dough by spoonfuls onto a cookie sheet, then freeze until hard and put in gallon freezer bags.  That way, we have homemade cookies just minutes away anytime we have guests.
