Cinnamon Twist Bread

Another snow day adventure, here's a Pinterest idea brought to life.  This cinnamon twist bread was a delicious and fairly simple morning treat.  It looks fancy, but the technique is pretty basic (although mine was a little sloppy because we were so hungry!).  I used the same dough as I used for this braided fruit pastry, since I had all the ingredients on hand and it's a quick no-rise recipe.  The result was warm, cinnamony goodness!  The only thing I think I'll add next time is a light glaze.  That is, of course, assuming I can keep from digging into it the minute it comes out of the oven!

Cinnamon Twist Bread

Ingredients:

- 2 1/2 cups bread flour
- 1/4 cup granulated sugar
- 1 tablespoon instant yeast (one of the small packets)
- 3/4 teaspoon salt
- 1 cup warm water
- 2 1/4 teaspoons vegetable oil
- 3/4 stick butter or margarine
- 1/2 c. sugar
- 2 - 3 T. cinnamon

Directions:

1.  Preheat oven to 350 degrees.  Mix dry ingredients together in a large mixing bowl.  Add water and oil and mix for 6 minutes using an electric mixer on medium-high speed.

I started with my regular mixer attachment
then switched to the dough hook

2.  Spray a smooth clean surface with cooking spray and place dough in the center.  Lightly spray a rolling pin with cooking spray and roll the dough out into a large rectangle, about 1/8" thick.

3.  Spread softened butter of the entire surface of the dough, then sprinkle with sugar and cinnamon.

4.  Roll dough like you are making cinnamon rolls, pinching the ends to seal.  Instead of cutting into round rolls, cut along the length of the roll (ya know, hot dog style), leaving one end in tact.

so I got a lil sloppy...

5.  Twist the two sides to form a beautiful twisted roll.  You can leave it straight or form into a circle on an ungreased cooking sheet.

looks a little less sloppy when twisted...

even less sloppy when formed into a circle...

6.  Bake for 25-30 minutes until golden brown and cooked through.  Brush with a glaze, drizzle with icing, or dig right in!  I won't judge ya either way! :)

and by the time it's cooked,
the kitchen smells so darn good that
no one would dare stop to notice the imperfections!
