Caribbean Chicken Kabobs

Ingredients:
-1 lb. boneless chicken breasts, cubed
-3 T. Caribbean Jerk seasoning
-1/4 c. olive oil
-1 small pineapple, cut into 1-inch cubes
-1 red onion, cut into 1-inch pieces
-1 each, red and green bell pepper, cut into 1-inch pieces
Directions:
1. Place chicken pieces, Jerk seasoning, and olive oil in gallon Ziploc bag. Massage bag to mix, marinate in refrigerator for 1-4 hours.

2. Chop vegetables and pineapple.

3. Alternate chicken, pineapple, onion, and peppers on skewer. Grill over medium heat until veggies are tender and chicken is cooked through.

Spicy Steak Kabobs
Ingredients:
-1 lb. boneless top sirloin, cut into 1-inch cubes
-2 T. chopped fresh cilantro
- 2 t. hot sauce
-1 clove garlic, minced
-1/4 - 1/2 t. crushed red pepper
-2 t. dill
-1/4 c. olive oil
-1 c. mushrooms
-1 sweet onion, cut into 1-inch pieces
-1 each green and yellow bell peppers, cut into 1-inch pieces
-1 package, Green Giant frozen corn "Niblets", thawed
Directions:
1. Place steak, seasonings, and oil in Ziploc bag, massage to mix. Marinate in refrigerator for 1-4 hours.
2. Chop vegetables. Arrange on skewers, alternating meat, mushrooms, and vegetables, placing one piece of corn on each skewer.

3. Grill over medium heat until vegetables are tender and steak is cooked through.

We made the chicken kabobs last night, they were really good! Our only problem was we used a different type of onion (yellow?) and they were a little too strong. We had to cook them a bit longer. We served them with rice.
