This is a recipe from my friend/neighbor. It's an awesome/quick weeknight meal with only a few ingredients that can be easily kept on hand. And, like most of my fav meals...it makes for great leftovers!
Sausage and Peppers
-1 pkg. kielbasa sausage (turkey/pork), cut into 2-inch pieces
-2 bell peppers (I like to get 1 green/1 red), coarsely chopped
-1 can pineapple chunks
-1 bottle BBQ sauce (Robin & I use Sweet Baby Ray's)
-white or brown rice
1. Brown sausage in a large frying pan. Add bell peppers and saute until slightly softened, about 2-3 minutes.

2. Add the pineapple and some of the juice, reserving the rest of the juice. Simmer for ~5 minutes. Meanwhile, start the rice according to package directions.

3. Add BBQ sauce to taste (usually about an entire small bottle) and most of the remaining pineapple juice (to thin the sauce). Simmer on low for 5-10 minutes, or until rice is done. Another great thing about this dish is that it can simmer for as long as you need it to while waiting on the rice.
