Ingredients:
-4 baking potatoes
-2 T. olive oil
-salt and pepper
Directions:
1. Preheat oven to 375 degrees. Wash potatoes and poke several times with a fork. Microwave for 10 minutes (to speed baking time).
2. Cover baking sheet with foil. Place potatoes on foil; drizzle with olive oil, sprinkle with salt and pepper. Bake for 15 minutes, or until soft.
Serve with butter, sour cream, shredded cheese, and/or chives.
