S'mores Popcorn Balls

Here's a Mama's Kitchen original that everyone will love!  As a kid, one of our favorite treats was Mom's marshmallow popcorn (melted butter and marshmallows poured over popcorn, then devoured).  After making a batch last week for Michael & me, I was inspired to jazz it up a little with some chocolate chips and graham crackers.  The result is this amazingly ooey, gooey, chocolately goodness!  Here's how Mama makes it:

S'mores Popcorn Balls

Ingredients:
- 2 bags plain popcorn (unpopped kernels removed)
- 1 lb. bag marshmallows
- 3 T. butter
- 1/3 c. mini chocolate chips
- 1/2 package graham crackers, crushed

Directions:
1.  Cook popcorn in the microwave, remove all unpopped kernels.  Meanwhile, melt butter in a large pot over medium heat.

2.  Add the marshmallows and cook, stirring frequently, until completely melted.

keep stirring to prevent burning/browning

must resist the urge to lick the spoon

perfect!

3.  Place the popcorn in a large bowl and pour hot marshmallow over the top.  Gently stir to coat the popcorn evenly.

4.  Allow popcorn to cool slightly, then gently fold in chocolate chips.  Crush the graham crackers in a medium bowl (leaving some small pieces of cracker in tact), form popcorn mixture into balls, and roll in the graham cracker crumbs.

leave some pieces of cracker to add texture

let cool completely on wax paper,
then store in gallon Ziploc bags

it's too bad these couple won't fit in the bag...
better call them "samplers" and not waste a second bag, right?
yes, when there's chocolate involved, it's always a yes!
